Healthy and Delicious Black Bean Burgers

I tried a new recipe last night and I have to say, I was quite happy with the final result. This dinner was easy, healthy, and only 2 Weight Watchers points.

I found the initial recipe via Pinterest and was quite intrigued.  I followed the steps listed and made some of my own tweaks.  No matter what healthy eating program you are following, this recipe fits right in and is very easy.

The ingredients I used were:

1 can organic black beans

1 handful cilantro

2 minced garlic cloves

chopped red and orange peppers (about 1/4 cup combined)

1/2 c. oatmeal

1 egg

1/2 medium onion

1 teaspoon pepper

1 teaspoon cumin

dash of salt

Following guidance from the original recipe, this is what I did:

Drain and rinse black beans.  In a food processor or using a food masher, mash/puree the black beans to a chunky consistency.  Put puree into a bowl to mix.

Next, puree together the cilantro, oatmeal and onion chunks.  Add this mixture to the beans and also stir  in garlic, cumin, salt, pepper, and the egg.  Mix together until well blended.

The mixture should look something like this:

Then with a spoon I spooned the bean mixture into a dish lined with wax paper.  I used a spoon to shape these into patties, otherwise it would be challenging because the mixture is quite soft.I put wax paper in between each layer and  then refrigerated these for an hour. 30 minutes would probably in the fridge would probably firm these up enough.

When ready to cook, heat a small amount of olive oil, grape seed oil or coconut oil in a skillet on medium high heat. Add the patties to the skillet and brown for about 3-4 minutes on each side, until brown and heated.

I topped my burger with slices of avocado and ate it with a fork.  It was so good!  For my husband’s burger, I added pepper jack cheese, mayo and served it on a bun.

I was quite pleased with this recipe and am also happy to say that I had 3 extra patties to freeze.  The next time I can just pull out  a patty and heat up.  Now I have a healthy freezer meal ready to go, which is an added bonus!
